Doogan’s Weeknight Chili

Ingredients

1 lb ground beef (85% works best)             1/4cup of your favorite taco seasoning mix or chili powder
1 bag frozen onions (~10 oz, I think) or 2c fresh onion diced
1 tbs squeeze garlic or 3 cloves fresh garlic minced
2 16 oz jars of your favorite salsa (I use Herdez medium or hot)
1 can of beans (I prefer black beans)

Instructions

1. In a Dutch oven or similar pot, brown the ground beef over medium high heat

2. Add the seasoning and let it bloom for about a minute or until  very fragrant, stirring constantly.

3. Add the onions and let them thaw and soften until they brown a bit and the water starts to evaporate

4. Add the garlic and stir until you can smell it, maybe 30 seconds or so

5. Add the salsa and the beans and bring to a simmer

6. If you’re hungry, start eating or if you  can wait, pop the Dutch oven into a 300 degree oven and let it simmer until you’re ready to chow down

Notes:

If you want to brown the beef then just dump everything in because you are lazy like I am, go ahead.  Bring to a boil and reduce to a simmer or pop it in a 300 oven until you’re too hungry to wait.

Rosie's Tiger Butter Fudge

Ingredients

Instructions

1 bag vanilla chips (11 oz)

1/2 cup creamy peanut butter

1/2 cup semi-sweet chocolate chips

1. Line a bakers quarter sheet (or a 9×13 glass pan) with parchment paper or foil.

2. Put semi sweet chocolate chips in a small glass bowl. Microwave for 1 minute and stir gently until smooth. Set aside.

3. Pour vanilla chips in a medium sized glass bowl. Microwave for 1 minute 30 seconds. Stir gently until smooth. Add peanut butter and stir until well combined and smooth.

4. Pour vanilla-peanut butter mixture onto the prepared pan. Mixture won’t reach the edges of the pan and that’s OK. Once it’s settled, take the melted semi sweet chocolate and pour it onto the vanilla-peanut butter mixture in lines.

5. Take a knife and run it the opposite direction of the chocolate lines you created, to achieve a swirl pattern. Run your knife through the mixture as much as you’d like, to create your desired swirl pattern.

6. Let cool either on the countertop or in the fridge. Cut into small squares. Store in an airtight container.
